Croquembouche is the traditionnal French wedding cake consisting of choux pastry filled with a grand-marnier crème patissiere and assembled using caramel to stick them together and shaped like a pyramid. It is traditionnally called "Piece Montee" (mounted part) and originates from early XIX century. There are a lot of early writings about tall cakes assembled for large parties and it is hard to really define who created the Croquembouche.
