A fraisier cake is derived from the word "fraise" meaning strawberry. It is a classic french cake comprised of a genoise (light almond sponge cake) imbibed with a syrup and alcohol, filled with a vanilla crème mousseline (creme patissiere lightened with meringue) and fresh strawberries usually topped with meringue.
